Snacks

Crostini with salad of quickly sautéed langoustine and dill cream on fresh cheese.
Puffed parsley chips spread with parsley emulsion and 12-year Baerii caviar.
Crispy cone filled with salad of smoked trout and toasted sesame.

Appetizer 1

Grilled lobster tail with sunchoke compote, roasted hazelnuts, aromatic soy broth, and tender herbs

Served with freshly baked bread made from Öland wheat and double-fermented Arla Unika butter

Appetizer 2

Baked New Year’s cod on a bed of salt-baked celery, celery purée with browned butter and lemon, along with fish stock simmered with champagne, filled with löjrom, trout roe, fresh herbs, and grilled chive oil.

Main Course

Beef tenderloin cooked in crépine with a herb and mushroom soufflé, served with caramelized carrot purée and sherry sauce with pickled mustard seeds. Accompanied by Pommes Anna and a cabbage salad of sautéed palm kale, fresh cabbage shoots, crispy kale, roasted almonds, and mustard vinaigrette.

Dessert

Mousse made from caramelized white chocolate with a core of tangy blackcurrant compote, coated with dark chocolate. Served with crème anglaise and a crispy leaf tuile.

Pick-Up of Your New Year's Menu in Aalborg

Easy and Convenient

You can pick up your New Year’s menus on December 31 between 11:00 AM and 2:00 PM at the hotel where you ordered the menu for pick-up. If you are picking up the menus by car, there is a temporary parking option right in front of the hotel. Here, you will receive your ordered New Year’s menu—along with our best wishes for a Happy New Year.

Our New Year’s menu is prepared so that each dish requires minimal kitchen effort just before serving. In collaboration with our chefs, we have created a written presentation guide as well as a series of plating videos that  guide you through each dish and ensure a beautiful presentation for your guests.

  • No, unfortunately you cannot. The New Year’s menu must be ordered for a minimum of 2 servings

  • Unfortunately, we cannot accommodate special diets or allergens in this year’s New Year’s menu.

  • Yes, you can cancel some or all of your servings after your purchase until November 30. Simply contact Bühlmann at guestsupport@buhlmann.dk.
  • For cancellations made by November 30, the full amount will be refunded to the credit card used for payment; after that, no refunds will be issued.
  • Yes, you can do that, and you don’t need to inform the reception about it
  • Simply order the additional servings you need using the same contact information as your initial purchase. Once your order goes through, you will receive another ticket via email.
  • When you pick up your New Year’s menus, you simply need to present both of your tickets
  • You can pick up your menus on December 31 during the hours applicable to your chosen pick-up location
  • All our New Year’s menus are packed in boxes with handles, making them easy to transport home.
  • If you have purchased 2 servings, you should be able to transport them by bus or train without any issues.
  • When you pick up your New Year’s menus, you will receive a written presentation guide in the box.
